Abstract: Using an effective chiral quark theory for the single nucleon, we describe the equations of state (EOS) of nuclear matter (NM) and quark matter (QM), and discuss the phase transition between them. We pay special attention to the effects of the nucleon quark structure on the NM EOS, and of scalar diquark condensation (color superconductivity) on the QM EOS.
