Abstract: The article discusses the effectiveness of high power ultrasound (HPU), its advantages over current technology and its benefits to the wine industry. It emphasizes that ultrasound can be applied to kill viable Brettanomyces/Dekkera bruxellensis yeast cells based on two laboratory studies. It mentions that HPU can be used in cleaning and decontamination of oak barrels and oak alternatives or planks and staves.
